THE sweet smell of sugar being boiled down filled the kitchen at the Umebachiya sweet shop in Sumida Ward, Tokyo. Owner Soichi Maruyama lifted vivid red cherry tomatoes out of a pot and carefully rolled them in sugar in a wooden box, soon turning the red tomatoes white.
