The Hokkaido Scallop Tartar (S$32, above) with marinated zucchini and black truffle, a colourful Robusta Lobster "Tortelli" Pasta (S$38) made with saffron potato, lobster bisque espuma and saute lobster, and the Conchiglioni Pasta alla Bolognese (S$32) which features Challand duck ragout, foie gras espuma and green apple sauce.
