The iconic Bar & Billiard Room at Raffles Hotel Singapore reinvents itself for a new gourmet journey.

ALAIN DUCASSE is nothing if not the master of reinvention. With a keen eye on innovation and deep respect for rich culture and heritage, he successfully brought the iconic Bar & Billiard Room into a new age with BBR by Alain Ducasse - a Mediterranean-inspired bar and grill at the Raffles Hotel Singapore. Now, after a necessary hiatus brought on by the humbling pandemic, the maestro is back in full force with OSTERIA BBR - its bold lettering a shout out to a new beginning and a fresh gourmet adventure.

Opening on July 23, OSTERIA BBR is a love letter to the Italian Riviera, a region which has captivated the masterchef with its natural bounty of native ingredients and culinary craft, now transported to the vibrant interiors of this historic dining landmark.


OSTERIA BBR, says Christian Westbeld, managing director, Raffles Hotel Singapore, “continues to reflect the Bar & Billiard Room’s rich heritage, while revealing chef Alain Ducasse’s provenance, culinary legacy and deep passion for Italian gastronomy.”

Helming chef Ducasse’s new vision is Francesco Soletti, an Italian native whose resume is dotted with Michelin- starred restaurants including the former’s crown jewel in Monaco - Le Louis XV-Alain Ducasse à l'Hôtel de Paris Restaurant.

Born and raised in a family of farmers, chef Soletti draws upon his own heritage to deliver a produce-driven menu rooted in traditions but executed with a contemporary touch.

The food is of-the-moment yet familiar, with an emphasis on antipasti, freshly-cooked pastas, seafood, grilled meats, wood-fired pizzas and more. But for the ultimate taste of OSTERIA BBR by Alain Ducasse, the Menu Tentazioni (S$108++) is a curated selection of seven signature creations. And for a quick sampler at lunch, there’s the option of a two-course (S$36++) or a three-course (S$42++) menu.

There will be every opportunity for chef Soletti to flex his Michelin-honed muscles with inspired creations such as Mazara del Vallo Red Prawn Tartare - a composition of pristine raw shrimp, creamy mozzarella, delicate jelly and Kristal caviar; Sea Urchin Risotto - dreamy risotto in a dalliance with uni, tomato water and Provolone del Monaco cheese; Marinated Sea Bream - an artful arrangement of glistening white fish anointed with the zest and curd of Amalfi lemons; and Lamb Rack - hot off the wood-fire grill and partnered with artichoke and goat’s cheese.


Translated into Italian "Happy Hour", this preprandial cocktail tradition is very much in the DNA of OSTERIA BBR - with a line-up of spirited creations served at the cosy indoor bar or balmy al fresco patio. Delight in favourites like Tempesta Siciliana, House-aged Negroni, and Alba Rossa, a clever twist on the classic Aperol Spritz. True to its heritage, each cocktail features an Italian spirit or ingredient to capture the essence of the Italian Riviera

There’s also a range of Italian vino to add to the mood - expand your repertoire with its wine by the glass programme that lets you taste premium as well as accessible- priced labels.

Don’t forget the bar snacks which include addictive bites like Genovese Pesto Tigelle - stuffed Italian bread with arugula, parmesan cheese, tomato and anchovies; and Pizza Fritta Montanara - a house signature deep-fried pizza dough topped with slow-cooked tomato, buffalo mozzarella, 36-month aged Parmesan cheese and basil. Sweeten the deal with classic tiramisu or a show-stopping Pizza al Cioccolato - as you can guess, this is a chocolate pizza, but made with Alain Ducasse’s premium line of white, milk and dark chocolate.
