MANDARIN ORCHARD SINGAPORE

From a rousing dragon and lion dance on the first day of the lunar new year to auspicious menus at two Michelin-starred Shisen Hanten by Chen Kentaro, you'll be assured of a year of plenty when you dine at Mandarin Orchard Singapore. You can also feast to your heart's content at Triple Three and Chatterbox, or take away signature delicacies to celebrate in the comfort of your own home.

At Shisen Hanten by Chen Kentaro, pick from seven auspiciously-themed set menus—from the eight-course Prosperity menu at $538++ for four persons, to the Majestic menu that features Whole Roasted Suckling Pig among its nine courses, at $2,988++ for 10 persons.

Dishes making their debut on the menu this year are: Roasted Brown Rice-fed Chicken topped with Garlic; Mala-glazed Barbecued Pork; and Braised ''Rat Noodle'' (Bee Tai Mak) with Lobster in Superior Broth.

For a memorable reunion dinner at home, take away Shisen Hanten's specialities such as the Baby Abalone Fortune Pot, and Prosperity Salmon Yu Sheng. A combination of 20 premium delicacies including dried oyster, fish maw and Chinese sausage go into this classic fortune pot, and each order is accompanied by a complimentary Salmon Yusheng, and Glutinous Rice with Dried Sausages.

Other festive highlights include Hokkaido Pumpkin Steamed Nian Gao, Golden Pineapple Ingots, and Steamed Yam Cake with Dried Scallop. A new addition is the Four Treasures Mini Nian Gao, featuring new flavours such as rock melon, milk tea, and traditional red sugar.

At Triple Three, Mandarin Orchard Singapore's award-winning Japanese-inspired international buffet restaurant, an array of Lunar New Year specials await as well. Indulge in Buddha Jumps Over the Wall, Braised Pork Trotters with Black Moss, Roasted Suckling Pig, Wok-fried Crayfish with Black Pepper, and a special creation of grilled lobster topped with a decadent layer of uni sauce.

To ensure a fortuitous start to the year, each menu begins with the Glorious Prosperity Nyonya Yu Sheng, with a choice of smoked salmon or abalone.

For a splendid year, there is Fish Maw Soup with Prawn Balls, Mushroom & Fatt Choy. This heartily nutritious Nyonya-style fish maw soup has bouncy prawn balls, juicy mushrooms and fatt choy, which symbolises prosperity for the whole family.

For a joyous year ahead, Hua Diao Wine Steamed Prawns are cooked to perfection and retain their natural juices, with a dash of Hua Diao Rice Wine to enhance their fragrance and taste.

Representing abundance is the Steamed Red Garoupa Hong Kong Style, with fragrant soy sauce complementing the tender yet firm flesh of this delicately steamed fish.

Broccoli & Cauliflower with Abalone & Scallop symbolise prosperity and the blossoming of new beginnings - fresh scallops are stir-fried with abalone, and the sweetness of the gravy is intensified by the umami of plump shiitake mushrooms.
