SPORTING polished marble counters and sophisticated fudge machines, leading chocolate maker Barry Callebaut's renovated chocolate academy is every chocolatier's dream come true.
The Zurich-based chocolate giant celebrated its 20th year of operations in Singapore on Monday and unveiled its newly refurbished chocolate academy during the joyous occasion. Helmed by award-winning chef Seung Yun Lee, the academy serves as an institution of learning for chefs of varying levels of competency.
Beginner level courses cater primarily to home cooks and semi-professionals while advanced level courses are designed for industry professionals. There are around 100 classes offered each year and an estimated enrolment of 1,0…
