THE famed Liao Fan Hong Kong Soya Sauce Chicken Rice & Noodles will be opening its first restaurant in November. Called Hawker Chan after Liao Fan founder Chan Hon Meng, the restaurant is a partnership between chef Chan and Hersing Culinary which owns the Asia-Pacific franchising rights to Hong Kong's Michelin-starred dim sum eatery Tim Ho Wan.

At a press conference on Oct 28, Hersing's executive chairman Harry Chua said that Hawker Chan will bring soya sauce chicken to the next level. The company has invested S$1 million into the 2,000 sq ft restaurant which can seat 80 people.

"As a quick service restaurant, diners will be able to eat in a comfortable enviroment with air conditioning. There will be a proper system for ordering, payment and food collection," said Mr Chua.

On the menu will be the famed soya sauce chicken and "other new dishes which we are still planning for", said chef Chan, 51, who will be splitting his time between the hawker stall and the new restaurant.

Prices at the new restaurant are still being worked out, but they will be higher than at the hawker stall yet affordable for the masses.
