The D'Oliveras Madeira 1905 (left) still tasted so fresh and at its peak that it looked as if it could be kept another century. The Tokay Pinot Gris Reserve Personelle 1992 (right) went well with the fish course.

A Madeira aged 110, still lovely

These Portuguese wines are exposed to heat during fermentation and during maturing period in casks.

MADEIRA is a classic dessert wine, beloved of the British - and the Americans. (It was the wine with which they toasted their independence in 1776!) To my surprise and delight, my host last week produced a Madeira for dessert wine. It was stunning.
