DINING Four Hands Dinner with Hideaki Sato
AWARD-WINNING restaurant Bacchanalia will be hosting a four-hands dinner, this time with Hideaki Sato, the chef patron of Michelin-starred Hong Kong restaurant, Ta Vie. Chef Sato will be cooking alongside Bacchanalia's head chef Ivan Brehm.
The two chefs will present an eight-course menu with snacks and pre-desserts based on their memories and recollections of past culinary experiences.
Chef Sato is known for his delicate and refined cooking style blending French technique with the kaiseki traditions of his homeland and the choicest bounty of the Asian seasons. He will present dishes such as poached oyster wrapped with wagyu and grated celeriac jelly, and his favourite dish from memory, which is pigeon roasted with aged mandarin skin and served with a chicory confit flavoured with Keemun tea, a leaf from China's Anhui province with a slight aroma of…
