Banning foie gras boosted its popularity in California

A LOT of people didn't know they wanted foie gras ice cream sandwiches until California made them illegal.
Humphry Slocombe, an ice-cream parlour with two locations in San Francisco, introduced the item in 2008 - more a two-bite slider than a sandwich, with one ounce of foie-gras- and-caramel ice cream between two gingersnap cookies. The shop initially offered it only as an occasional special, but when it became clear in 2012 that the state was about to ban foie gras, demand for the sandwich spiked.
