Cocktails Go Local
At vintage-styled Gibson cocktail bar, forget about ordering a whisky highball. Not when you can get the Guava Highball made with Malaysian guava, Altos Reposado Tequila, with salt and ulam raja. The team also works with local producers for some of its ingredients, such as Citizen Farm for ice mint and Cuban oregano to use in its Urban Farmer No. 2 cocktail. It also works with local bee farm Nutrinest for its stingless trigona bee honey which is then house fermented to create the mead in the Honey PX. Depending on the cocktail, you may be sipping from one-of-a-kind vintage glassware, a suspended beehive-shaped vessel or a copper pineapple complete with a hand-soldered brass straw.
