If a rose is a rose no matter what it's name, a tomato is a tomato no matter what its shape. That's the philosophy behind the new dining concept Kausmo, which rescues perfectly edible but not so pretty produce from being thrown away, and turns them into thoughtful, delicious and innovative cuisine. The latest eatery to be unveiled by the Les Amis Group is run by chef Lisa Tang, and restaurant manager Kuah Chew Shian - childhood friends on a mission to raise awareness about food wastage. The duo offer only one tasting menu which is dictated by the ingredients they get, and you can expect dishes such as a Teochew-influenced wild fish congee with Javanese ginger and coriander, and local trevally with braised daikon in a grilled cabbage broth. The six-course carte blanche menu is priced at S$75, with kombucha tasting at an extra S$20.

Kausmo is located at #03-07, Shaw Centre. Tel: 8126 8538. Open for dinner only.
