The Briton has taken the big step of moving away from fine French cooking to celebrate his own roots, and the result is a thoughtful reinterpretation of classic British fare with a personal twist. Enjoy fish and chips re-invented as a tartlet of cod brandade; summer beans in an artful salad; and signature salt marsh lamb sourced from Northern Wales.
