Basque Kitchen by Aitor to reopen with new name and Michelin-starred chef 

Bjoern Alexander of the two-starred Octavium in Hong Kong will move to Singapore to take the helm

    A GERMAN chef who cooked Italian food well enough to earn two Michelin stars at Hong Kong’s Octavium restaurant is set to reprise his success in Singapore when he takes over the kitchen at the former Basque Kitchen by Aitor premises. 

    The restaurant at the Fullerton Waterboat House will reopen as Matera on July 19, which new executive chef Bjoern Alexander says is named after an ancient coastal city in Italy with a rich heritage. He says: “It is similar to Singapore which is also surrounded by the sea, and the restaurant which is located in a heritage building.”

    The restaurant is part of the Unlisted Collection, and will serve his unique style of modern Italian food with Japanese and Chinese influences.
