Olive oil, pasta and pizza may be often associated with Italy, but caviar? The country is home to Calvisius, one of the oldest producers of farmed caviar in Italy with over 40 years of history behind it. Denis Lucchi, chef at modern Italian Buona Terra currently offers a five-course tasting menu priced at S$148, with a range of Calvisius caviar for you to add on that's priced accordingly. The caviar is extracted from farmed sturgeon of various breeds - from Russian sturgeon which produces oscietra with a pronounced flavour and long finish, to the most rare and costly beluga caviar harvested from Huso Huso sturgeon that are at least 20 years old. See how Chef Lucchi works this black gold into his dishes, including a decadent creamy scrambled eggs topped with oscietra caviar, sea urchin and truffle croutons.
