    THE CHEFS AT PARKROYAL COLLECTION Marina Bay have been busier than Santa’s elves this festive season, crafting exclusive menus at the hotel’s restaurants Peppermint, Peach Blossoms and Portman’s Bar. And that’s not even counting the expansive menu of takeaway treats for those who prefer to dine in the comfort of their own homes.

    Peppermint treats

    Christmas Eve and Christmas Day, the menu ups the decadence level with the likes of 16-hour pot roasted wagyu with barley and apple risotto; salmon and prawn mousse en croûte with truffle cream and salmon roe; baked oysters biltmore; and a spread of desserts including sudachi strawberry verrines and raspberry pistachio yule log.

    Peach Blossoms’ wine pairing

    Executive Chinese Chef Edward Chong puts his own spin on Christmas feasting with a six-course Penfolds Festive Wine Pairing set menu that’s available now till Dec 30. His curated menu includes chilled abalone in yuzu ponzu sauce; Peking duck served with foie gras in a golden trophy; braised lobster with yuzu somen in superior stock; applewood-smoked Iberico pork char siew; and chrysanthemum jelly served with French charentais melon and peach gum.

    From Dec 22 until Jan 1, you get to cross over from Christmas to the new year with his Harmonious Blessings Set menu priced at S$188++ per person. On the menu are his original creations such as chilled amaebi with jelly fish and black garlic dumplings; a luxury mini claypot rice filled with sous vide lobster and black truffle; and chilled avocado puree paired with hazelnut ice cream.

    Tea time at Portman’s Bar

    Until Dec 30, take a break from shopping at Portman’s Bar where a festive high tea awaits with a gourmet spread of sweets and savouries. For the sweet-toothed, dig into homemade cranberry scones with clotted cream; Santa Hats – aptly-named cherry-pistachio cakes; and a host of pralines and cookies. Savoury taste buds can gravitate towards applewood-smoked sustainable salmon; festive turkey salad; and mini salmon and leek pies. If you fancy bubbly more than tea, there’s a two-hour free flow of prosecco (S$38++ per person) or Perrier-Jouët (S$68++).

    Don’t want to brave the crowds but still want a fancy dinner at home? The hotel’s Whimsical YuletideeShop takes the hassle out of meal planning with a range of festive roasts and goodies. Order a turkey marinated with cajun spices and rosemary from the inhouse farm, with chestnut stuffing and giblet gravy; or honey-glazed bone-in gammon ham. Or how about the Festive Family Bundle that feeds four to eight people with a spread that includes roasted French corn-fed chicken; glazed boneless ham; tagliatelle with mushrooms in truffle cream sauce; and bread and butter pudding.
