Guilt-Free Dining
Gluten-free doesn't mean gourmet-free. That's the objective of The Butcher's Wife, the latest member of the Spa Esprit Group's stable of restaurants. It replaces Open Door Policy on Yong Siak Street in Tiong Bahru, and puts gluten-free cooking at the forefront with its entire menu designed to cater to the gluten-intolerant and those suffering from coeliac disease. Spa Esprit founder Cynthia Chua engaged consultant chef Diego Jacquet (who was also behind the group's boCHINche) to create a comprehensive menu that will appeal even to those with no dietary restrictions. In fact, you can't even tell it's gluten-free with its line-up of modern European fare including Cured Salmon with pickled courgettes, creme fraiche and chia seeds; Chilled Almond Soup with crab, apples and coriander; Grilled Octopus and gluten-free Chestnut Pappardelle. Meat-lovers can check out the beef burger in wheat-free buns, or grass-fed grilled Argentine rib eye with triple-cooked chips.
