Hawker goes French
Street food gets a French twist when Jeremy Gillon of the recently-opened French bistro Audace serves a weekend brunch priced at S$68++ per person. Highlights include his version of grilled pork satay with peanut praline sauce, a contemporary laksa made of deep-fried prawn balls wrapped in noodles, and chicken rice made of poached chicken breast and risotto infused with chicken stock.
Meanwhile, Emmanuel Stroobant of the one-Michelinstarred Saint Pierre has created a local-inspired nine-course dinner menu at S$248++ per person. Nasi lemak is turned into poached Hokkaido king crab crusted with puffed coconut rice, while Chinese-style braised pork belly is translated into Iberico pork in a pork consomme, char-siew havings, and egg noodles.
