Mum's Not Cooking
Folklore chef Damian D'Silva presents his tribute to mothers with a menu that reflects what his own mother cooked for him as a young army recruit when he was homesick during Basic Military Training. She and family members turned up on Family Day with tubs of curry, vegetables and meat that made him the envy of fellow recruits. Now, at his restaurant in Beach Road, he indulges all mothers with a menu of homespun favourites such as Curry Ayam Pekat - a rich, aromatic curry scented with lemongrass and galangal; Papaya Masak Titek - half-ripened papaya cooked in a soupy rempah titek made of dried prawns and salted fish; and Keluak Babi Tulang
An Ode to Mum is available until May 13 at Folklore, Destination Singapore Beach Road. Tel: 6679 2900 / 9021 9700.
