Restaurant Fiz Chef: Hafizzul Hashim Opening: June 5, 2023
Hafizzul Hashim is fascinated with the chameleon-like traits of South-east Asian cuisine. Despite the region’s varied cuisines with distinctive characteristics, each has more in common with the other than one might think.
He says: “This is because we share a similar ancient culture that has been transmitted via trade routes and the interaction between people. A minor tweak in the proportions of ingredients can shift a dish’s identity from Malay to Thai. The Cambodian kreung closely resembles rempah. Then there is singgang in Malaysia, which is also known as sinigang in the Philippines.”
Hafizzul’s new eponymous Restaurant Fiz sets out to celebrate the diversity of the region, and marks the chef’s move to a commercial space after running his successful Fiz Private Dining since June 2022.
