RWS picks Culinary Class Wars chef to headline restaurant in new hotel Laurus

The collaboration with Michelin-acclaimed Italian chef Fabrizio Ferrari is the latest in celebrity chef tie-ups at Resorts World Sentosa

    [SINGAPORE] A taste of the hit South Korean cooking show Culinary Class Wars hits Singapore as Seoul-based Italian chef Fabrizio Ferrari lends his name and experience to Laurus Table, the flagship restaurant of The Laurus – Resorts World Sentosa’s (RWS) newly opened luxury hotel.

    Ferrari spent 15 years at his family’s one-Michelin-starred restaurant in Lecco, Italy, before relocating to Seoul in 2019 to open Fabrizio’s Kitchen, serving Italian cooking with Korean influences. Also a professor of culinary arts, Ferrari was catapulted to global fame as one of the “white spoons” in the Netflix series, which pitted established chefs against up-and-coming “black spoons”. While he was eliminated in the earlier rounds, he has since become a celebrity chef, appearing on TV shows as well as his own YouTube channel.

    As consultant chef for Laurus Table, he will spearhead a Mediterranean-inspired menu emphasising locally harvested seafood while “celebrating the heritage of the Amalfi coast”, says Andreas Reich, RWS’ senior vice-president, hospitality general management.

    He adds that the restaurant aligns with RWS’ core environmental values by “championing sustainable practices as well as local and regional producers with every dish”.

    Ferrari, who is also a Marine Stewardship Council (a non-profit organisation that certifies fisheries and seafood) global ambassador, says that his ingredients-based philosophy revolves around “dishes that are executed simply but with finesse”. The menu features seafood from The Fish Farmer – a sustainable fish farm located off Singapore’s coast, as well as organic produce from around the region and herbs grown in its own garden.

    Ferrari is the latest celebrity or Michelin-acclaimed chef to team up with RWS in its food and beverage efforts. Sugarra in Hotel Michael is a collaboration with Aitor Jeronimo Orive of the former one-starred Basque Kitchen in Singapore, which closed down in 2023. 

    Recently, RWS teamed up with renowned patissier Pierre Herme to open the latter’s biggest flagship store in the world, including a full-service restaurant. 

    Paul Pairet, the French chef behind Shanghai’s three-Michelin-starred Ultraviolet – which closed down earlier this year – and Mr & Mrs Bund, is opening two outlets in the dining enclave Weave. Sundae Royale is an ice cream parlour, while Moutarde is a French bistro serving modern classics.
