Vegetable sushi? Ki Su tries to woo sceptics with plant-based omakase

The new vegetarian restaurant turns red peppers into maguro and pumpkin into uni, with mixed results

    • Ki Su takes over from a defunct Japanese restaurant.
    • A trio of snacks to start the meal.
    • Vegetarian sushi is made with red peppers, mushrooms and eggplant.
    • Realistic looking "uni" made from pumpkin.
    • A king oyster mushroom is deftly snipped to resemble the ridges of Hokkaido scallop.
    • Monkey head mushrooms stewed in brown sauce tastes like braised meat.
    • Pretty but odd dessert of soya pudding, matcha and leaves is served with compressed melon.

SAVE the fish. Tuna are dying out. Oysters don’t wanna be shucked anymore. Don’t kill cows, slaughter a red pepper instead. At least it doesn’t bleed. Or skewer an eggplant – have you ever heard one scream?
