"SPANISH and South American cuisine such as Peruvian cuisine has been quite a strong trend in Asia in the last two years. The poor economy in Europe is driving Spanish chefs to Asian cities such as Hong Kong, Singapore and Shanghai, and the tapas concept has caught on quickly as it is quite similar to dim sum. I don't think it is a trend that is here to stay, however. We are beginning to see it dying down because there are too many that have opened in a short span of time, and the markets have become too saturated.
