Grand Hyatt Singapore to open new restaurant with Michelin-starred chef

AS PART of its major refurbishment ahead of its reopening in 2023, Grand Hyatt Singapore is collaborating with Sergio Herman, chef-owner of several Michelin-starred restaurants in Europe, to make his Asian debut at the former Mezza9 space.
Set to open in the second half of the year, Hyatt is the latest hotel in Singapore to tie up with a well-known chef to elevate its food and beverage offerings. Recently, Capella Singapore opened its Italian eatery Fiamma in partnership with Mauro Colagreco of Mirazur fame, while Hilton Orchard tied up with American chef Nancy Silverton to open Osteria Mozza.
Herman is well-known in the Netherlands and Belgium, where his restaurants are located. He started his culinary career when he was a teenager and worked at Oud Sluis, a seafood restaurant which his father owned in the Netherlands’ westernmost region bordering Belgium.
