Guest Chef: Fine Dining For All

In Singapore, where most food ingredients have to be imported, dining out at a regular restaurant can be a costly affair, much less fine dining.
But Italian chef Davide Oldani doesn't agree, which is why he's on a mission to make fine dining an everyday affair, even in Singapore. At his restaurant FOO'D by Davide Oldani, set within Victoria Theatre & Concert Hall, a three-course lunch is priced at $45, and $52 for four courses. Dinner starts from $138 for five courses and $168 for seven courses. Not dirt cheap, but affordable enough to make a meal at FOO'D more than just an annual affair or a special occasion.
How does he do it? While there's no avoiding imported ingredients, sourcing locally helps to keep costs low. While not based in Singapore, he was at the restaurant's official opening in January. His visit took place slightly before Chinese New Year when there was an abundance of mandarin oranges. "There is no reason why we cannot use that in the menu."
