Burnt Ends & Meatsmith Smoked Mandarin Jujubes, Mandarin Sorbet, and Buah Keluak Pork Belly
"Mandarins are a common gift during CNY and I thought it would be nice to make something tasty with them," says chef Pynt. "Buah keluak is a flavour I've always liked and now with our stall at Gluttons Bay and we thought it would be great to play around with it." Smoked Mandarin Jujubes (served as petite fours) and refreshing Mandarin Sorbet with a smooth White Chocolate Mousse ($10) will be served at Burnt Ends (available on Feb 1, 2, 7, 8, 9). Buah Keluak Pork Belly ($9) features smoked pork belly slathered in the chef's buah keluak sauce, topped with ginger, shiso and fried peanuts and is available at Meatsmith Western BBQ stall (from Feb 1 to 10, closed on Feb 5).
