SINGAPORE'S namesake cocktail may have originated in the equally iconic Raffles Hotel, but the ensuing century has given plenty of time for local bars to put their own spin on it. One such spot is Nutmeg & Clove, where the Singapore Sling is among many classic cocktails to get a vibrant update.

Nestled on the upper floors of a heritage shophouse on Ann Siang Hill, Nutmeg & Clove has an industrial-meets-local feel, with dark wood panelling that evokes Chinese medicine halls, retro furniture, and a feature wall of vintage posters.

There's substance beyond the style, as the bar takes "a historical perspective of Singapore" with its cocktail menu, says senior bartender Jayden Ong. It offers both classic cocktails and their Singapore-inflected reinterpretations, which incorporate familiar cultural and culinary notes.
