    As a personal tribute to his grandmother's Peranakan cooking, Les Amis Group chairman Desmond Lim created Indigo Blue Kitchen, the group's latest restaurant to open at Shaw Centre. The menu is based on the classic dishes Mr Lim enjoyed in his youth, from bakwan kepiting soup using generous amounts of hand-picked crab meat shaped with pork and shrimp into a ball in a clear pork-prawn stock, to Nonya popiah featuring homemade egg skins instead of store bought plain wraps. Helming the kitchen is 28 year-old chef Chong Jun Xiang, who is not Peranakan but is personally mentored by Mr Lim and his cousin Gloria Teo who is the menu consultant. It's only in soft-opening stage for now, so the menu is limited to a four course set lunch (S$40) and five course dinner (S$55), with a full menu from June 7.
