Caviar and champagne are eternally entwined, and gourmets can now add a new place to indulge in both. Caviar Colony is a Singapore-founded caviar brand that has partnered Dom Pérignon to serve the companion luxuries at Caviar Bar, housed inside Italian restaurant, 28 Wilkie.
Savour different types of caviar including the Russian Hybrid Caviar, a cross between the Siberian sturgeon and the Russian sturgeon, with Dom Pérignon Pléntitude 2, which has scents of crystallised fruits and a flavour profile that is elegant and intense.
In addition, 28 Wilkie's head chef, Matteo Ponti, has also created five bar snacks that complement the champagne, including scrambled eggs on brioche, topped with caviar and chopped chives; and Draniki, a pancake made of potato and onion, topped with caviar, cheese, and seaweed powder.
