IT’S official. We are no longer just a nation of the food-obsessed. Overnight, we’ve become a planet of pizza pundits. We hunt down everything proofed and risen, analyse bubble size and fermentation lengths, and pretend we know the difference between fior di latte and mozzarella. And like serial daters, we ruthlessly dump one pre-loved pizza joint after another the moment a new one comes along and catches our fancy. Remember Mozza? D.O.C? Amo? Luka? Who? Who cares?
