    ASKING Japanese chefs in Singapore to work with a budget must be like forcing sushi chefs to make nigiri with one hand. A dinner omakase for under S$400? That’s akin to them violating an ancient code of ethics set by their spiritual masters centuries ago: “He who leaves to cook for the gaijin shall seek compensation no less than the worth of a man’s weight in eel from Lake Biwa, adjusted for inflation and foreign exchange rate”. In fact, to lower their price is such an abominable thought that they must quickly write a haiku to express their horror — “Oh ma ka se ... no discount”.
