If you're a fan of chilli crab but prefer yours spicy rather than sweet, then try the signature chilli pomelo crab at Blue Lotus Chinese Eating House on Sentosa, where owner Ricky Ng does not believe in holding back the chilli. Alternatively, he has recently opened Blue Lotus Chinese Noodle Bar at Science Park, which offers the same chilli crab recipe, but shelled and served in xiao long bao form without the pomelo. Be warned though - they may be small but these baos pack quite a punch. Other dishes to try are the tender slow-cooked beef in a mala sauce, and the chilled drunken chicken which is made with Shao Hsing Hua Tiao Chinese wine instead of cooking wine so the alcohol flavour is much stronger. The signature crispy pork lard truffle la mian is a good option too, served with crispy cubes of lard and springy yellow noodles.
