TAKE an obsession with Japanese cuisine. Add lush, 24 acres of farmland in Sonoma county, dedicated to the principles of sustainability and biodiversity, and you have SingleThread — a gorgeous farmhouse restaurant serving up an award-winning blend of California-grown produce and Japanese omotenashi.
Led by chef Kyle Connaughton and his wife Katina, the 3-Michelin-starred SingleThread is a destination in itself, with its luxury accommodation and restaurant set in picturesque wine country. And for the entire month of July, the Connaughtons bring a slice of that California-Japanese experience to Singapore at their residency in the Basque Kitchen by Aitor restaurant premises.
Connaughton, who spent years in Japan cooking for chef Michel Bras as well as in Japanese restaurants, and was also the head of R&D at The Fat Duck in the UK. He says: “We will present a 7-course version of the SingleThread menu that is also inspired by the location in Singapore, combining the dishes with some local flavours and ingredients.”
