What's Up This Week
On the Grill
When you want to sample several different cuts of beef but don't want to annoy a stressed butcher by making him cut a measly slice off several hunks in his chiller, The Travelling C.O.W has the answer. Singapore's first food truck has launched the C.O.Wabunga curated beef tray of five different cuts of meat that can be delivered to your home, complete with assorted meat rubs, recipes and a beef journal with details about what you're eating.
It's fuss-free execution - just marinade the beef with everything from chimichurri to TTC Ranch Rub, and pan grill. Priced at S$168 for the set, the meats are decent quality and don't need to be cooked sous vide as some of the recipes suggest - they're tender enough to be enjoyed when grilled slightly rare. US Prime Angus Rib Eye and A3 Wagyu Sirloin are the best of the lot, with the Irish dry-aged ribeye on the gamey side. A lean tenderloin is surprisingly tender, while Argentinian sirloin requires a bit of a chew. The only issue is that the meat can't be frozen and has to be consumed within two days, so make sure there are hungry people around to feed. You can order sides like oven roasted vegetables and iceberg lettuce with mentaiko sauce for a complete meal. - by Jaime Ee
