A whole new bam!
Four and a half years after they opened as a tapas and sake bar at Tras Street, BAM! has recently undergone a revamp to become an omakase-only restaurant. Menus start from four courses at S$98++ and go up to eight courses at S$188++. Sake-pairings are also available at an additional S$58++ for the four-course menu and S$98++ for the eight-course menu. Japanese ingredients feature heavily in some of chef Pepe Moncayo's dishes, such as a cold somen starter with sudachi lime and Kyoho grapes in a dashi broth, or the green beans with amaebi, uni and ponzu jelly; but he also brings his Spanish roots to the dinner table with a "gazpachuelo" with tuna noten (top of the fish's head), sago and tobiko.
