IN a year without travel, MO Bar's latest menu offers a taste of exploration, enabled by earlier forays abroad and some lab-level experimentation.
Beyond the full-length windows of the Mandarin Oriental bar unfurls a view of Marina Bay, to be enjoyed from plush couches. The interior's colour scheme of black, gold, and champagne finds echoes in the artfully-designed menu - though that itself aims to transport patrons elsewhere.
Each cocktail is inspired by a regional destination. The last volume of MO Bar's Nomadic Foragers series saw the team actually travelling to those locations for local flavours and vessels.
