National Day is just around the corner and Asian-centric eatery Ding Dong is all set to fly the flag as head chef Miller Mai collaborates with ex-MasterChef Singapore finalists to create grown up versions of their favourite childhood dishes. The chefs - Zander Ng (winner), Genevieve Lee (runner-up) and Aaron Wong (finalist) - put their personal spin on the likes of Otah-Otah, Samsui Chicken, and Roast Duck. Chef Ng blends traditional otah and Thai hor mok into a custardy, steamed spicy mackerel paste studded with barramundi and scallops, topped with ikura and calamansi gel; Chef Wong's Samsui Chicken features brined sous vide chicken thigh enhanced with a layer of jelly made from slow-fried ginger, shallots, garlic and chicken fat; while Chef Lee presents French-style but Peking Duck-inspired crispy duck breast with taro croquette and plum jus.
