Breakfast buffets are often a major selling point for customers when they choose a place to stay. So it is understandable that there is fierce competition to offer an inviting, seemingly inexhaustible banquet of choice.

Yet, even though the bacon may be lean, the business model is not. Breakfast buffets are one of the largest sources of food waste in hotels.
