Spice Tales
Cook like a two Michelin starred-chef with A Dash of Szechwan, a cookbook by Executive Chef Chen Kentaro, who helms Shisen Hanten at the Mandarin Orchard Singapore. The book was ranked second in the 'Best Cookbook by a Restaurant Chef' category at the 24th Gourmand World Cookbook Awards, which recognises the best in food and wine writing, with more than 600 entries from some 200 countries. Chen Kentaro's book was shortlisted with seven other books including Mauro Colagreco's tome on his restaurant Mirazur - the 2019 winner of the World's 50 Best Restaurants guide. Chef Kentaro's book features a collection of 50 recipes, including Shisen Hanten's signature dishes as well as his own family recipes originally developed by his grandfather Chen Kenmin - the 'Father of Szechwan cuisine' in Japan - and his father Chen Kenichi of Iron Chef fame.
