A Southern Italian wine dinner experience for The Business Times readers

THE Business Times (BT) is inviting its readers to a celebration of Southern Italian cuisine and wines at Sofitel Singapore Sentosa Resort & Spa.

The one-night Produttori di Manduria Wine Dinner will take place on June 27 at The Cliff.

It will feature Southern Italian dishes by The Cliff’s Chef De Cuisine, Paolo Benedet, paired with wines from Produttori Di Manduria, a prestigious winery located in the heart of Southern Italy.

The five-course dinner will start with an antipasto of Crudo di Ricciola (raw marinated king fish, with orange sauce and fennel pollen) accompanied by Alice Verdeca IGT 2021, which has delicious scents of hawthorn and acacia.

For the second antipasto, Polpo in Pignatta Modern (spiced octopus with pepper emulsion and Puglia olives and potatoes), it will be served with AKA Primitivo IGT 2021, a rose with flavours of strawberry and raspberry.

Diners will get to enjoy the pasta dish, Orecchiette alla Cime di Rapa (orecchiette pasta with broccolini sauce) with Primitivo IGT 2022, an intense and complex red wine with hints of cherry, plum and blackberry.

The main dish, Agnello Arrosto (roasted lamb with smoked eggplant emulsion), will be paired with Elegia Primitivo Di Manduria Riserva 2019, a deep ruby red wine, with hints of nutmeg, vanilla and cloves.

Don’t forget to save some room as well for dessert – Giardino Meditteraneao di Frutta (mango compote with sakura crème with a chocolate shell).

“The curated five-course menu will showcase the region’s rich gastronomic heritage, featuring authentic dishes that perfectly complement the wines from Produttori di Manduria,” says Sofitel Singapore Sentosa Resort & Spa’s Cluster General Manager, Cavaliere Giovanni Viterale.

He promises that Chef Benedet, who has worked in luxury hotels and restaurants across Europe and the Caribbean, will take diners on a “culinary journey through South Italy”.

Alessandro De Prezzo, managing director of De Prezzo Food & Wine, which distributes Produttori di Manduria in Singapore says, “The Cliff, with its breathtaking view of the South China Sea and elegant ambience, provides the perfect backdrop for this event.”

He also adds, “The wine dinner presents a unique opportunity for wine enthusiasts, gourmands and connoisseurs to immerse themselves in an unforgettable evening of indulgence.”
