Uni isn't a mainstay in Japanese cuisine alone. Sea urchin is also a prized ingredient on the Sicilian table. July marks the start of the sea urchin harvesting season in Salento Apulia, and you can get a taste of it in a special four-course menu at The Lighthouse. Start with a scallop carpaccio with a generous dollop of uni on top, followed by spaghetti tossed in a rich sauce of garlic, anchovies and bottarga, the traditionally Sicilian way to enjoy uni. For mains, choose between Boston lobster or veal tenderloin, served with uni sauce. Amalfi lemon is used in dessert, which makes for a refreshing palate cleanser. The uni menu is priced from S$148 per person, and available for weekday lunches and dinners from Mon to Sun.
