The Italian restaurant at St Regis Singapore welcomes a new chef de cuisine, Armando Aristarco, whose menu is a modern take on traditional dishes but with a strong focus on simplicity infused with an element of surprise. His Carnaroli risotto with sea lettuce, Hokkaido scallop and Baeri caviar is cooked without any dairy, but still very creamy. The surprise comes when the diner mixes up the dish. T: 6506 6884.
