The ever-innovative executive Chinese chef Edward Chong brings you the ‘wow’ moment with a whole, nitrogen-frozen rose that you ‘smash’ over a mountain of kanpachi, abalone, crispy white bait and organic mixed fruits, just before you ‘lohei’ for a healthy and prosperous Chinese New Year.

Peach Blossoms

Chef Chong’s Harvest Yusheng is just one of five creative Lo Hei platters you won’t want to miss in your reunion dinner to welcome the Year of the Rabbit. They’re all part of his lineup of ‘Bountiful Blessings’ Creations that diners can enjoy from Jan 15 to Feb 5.

Other new signature dishes include the Blossoming Abalone Treasure Pot – a rich catch of 10-head whole abalone, sea cucumber, scallop, braised pig’s trotter, live prawns, dace fish ball and more. Indulge also in Alaskan king crab and zucchini flowers in an intense kombu and dried scallop broth; and braised dried abalone served with stuffed crispy sea cucumber.

Myriad set menus are available, ranging from an Auspicious set at S$148++ per person, to the Delightful set at S$388++ per person.

Pick from a variety of yusheng, vegetarian and non-vegetarian treasure pots, nian gao, radish cake and barbecued meats. Hampers make great gifts too, with two premium options priced at S$288+ and S$388+, filled with red wine, canned abalone, exquisite Chinese teas, cookies and snacks.

Meanwhile, its takeaway Happiness Reunion Set Menu feeds 10 for S$688++, featuring Prosperity Salmon Yusheng, braised pig’s trotters and apple-smoked jamon iberico char siew as just some of the highlights.

Peppermint’s Bounty

A wholesome spread of all-time Chinese New Year favourites awaits at the all-day-dining Peppermint, with Chef de Cuisine Leon Yee curating a mix of Asian and international creations for lunch and dinner.

Expect an array of auspicious dishes including whole abalone, braised sea cucumber, smoked duck, pen cai and coffee-glazed wagyu beef short ribs. The spread changes daily and is available until Feb 5. Yusheng is also offered as an a la carte option, while its Auspicious Pen Cai filled with abalone, sea cucumber and tiger prawns, is prepared for takeaway to enjoy at home.

Portman’s Bar

Continue the celebrations at Portman’s Bar, where pastry chef Christopher Eng has crafted a special Asian-themed afternoon tea priced at S$58++ per person.

Savoury and sweet creations include homemade cranberry scones with clotted cream; apple-smoked salmon; mini tarts of free-range chicken with avocado and grilled peaches; bak kwa with pineapple and mozzarella ciabatta; and ivory chocolate mousse. Don’t forget a free flow of Chinese New Year cookies and pralines as well. Complete the indulgence with a two-hour free flow of prosecco at S$38++ per person or Perrier-Jouet champagne at S$68++.
