THREE great wines at dinner last night courtesy of an old and dear friend: Chateau Lafite Rothschild 1989 and Grands-Echezeaux 1990, preceded by the loveliest of champagnes, Roederer's Cristal.

There could not be a more delectable champagne to prepare oneself and one's palate for the wines and dinner to come. A Champagne Grand Marque and the top of the line, Roederer Cristal. Light yellow-gold, glinting in the light, fine bubbles continuously streaming to form a delicate bead around the rim of the surface, with a shy light bouquet, a blend of lime, oranges and peaches; rounded and medium-bodied, refined palate of fresh, ripe mandarin oranges and lemons. A fitting and mouth-watering introduction for the two wines to follow.
